A delicious dressing doesn’t have to be complicated. In fact, it can be super simple! And we’re proving that right here with 6 easy dressing recipes using olive oil as a base.
1. Lemon and Olive Oil Dressing
A lemon and olive oil dressing is an all-rounder you can use on practically any salad. But it’s especially good with fish due to its high citrus content.
What do you need?
- 3.5 tablespoons of fresh lemon juice (about the juice of one lemon)
- 10 tablespoons of extra virgin olive oil
- Sea salt and freshly ground black pepper
- Jar with a lid
Preparation:
Combine the lemon juice and olive oil in a jar and add salt and pepper to taste. Shake well and test the lemon olive oil dressing with a leaf of lettuce. Add more salt, pepper and/or herbs if desired. Your lemon olive oil dressing is ready!
2. Balsamic Vinegar and Olive Oil Dressing
This balsamic and olive oil dressing is especially suitable for Italian-style salads with lots of leafy greens and various types of antipasti for a big dinner.
What do you need?
- 3.5 tablespoons of balsamic vinegar
- 10 tablespoons of extra virgin olive oil
- Sea salt and freshly ground black pepper
- Jar with a lid
Preparation:
The preparation is almost identical to the recipe above. Combine the balsamic vinegar and olive oil in a jar and add salt and pepper to taste. Shake well and test the dressing with a leaf of lettuce. Adjust the seasoning to your liking. Enjoy your balsamic and olive oil dressing!
3. Sicilian Dressing
This dressing also goes especially well with fish salads, such as grilled tuna or shellfish. But don’t let that limit you—this is a very versatile dressing!
What do you need?
- 1.5 tablespoons of fresh lemon juice
- 1.5 tablespoons of fresh orange juice (or blood orange juice)
- 10 tablespoons of extra virgin olive oil
- A few pinches of dried oregano
- Sea salt and freshly ground black pepper
- Jar with a lid
Preparation:
Put all ingredients in the jar and shake thoroughly. Taste the dressing and add more oregano, salt, or pepper to your liking. Enjoy your Sicilian dressing!
4. Salad Dressing with Olive Oil, Vinegar, Star Anise and Clove
This olive oil salad dressing takes a more exotic turn! It pairs well with salads that include cheese or cold cuts. You won’t find this one ready-made in the store.
What do you need?
- 8 tablespoons of white wine vinegar
- 2 cloves
- 1 star anise
- 10 tablespoons of extra virgin olive oil
- Sea salt and freshly ground black pepper
- Jar with a lid
Preparation:
This salad dressing has a slightly different preparation. Pour the vinegar with a small splash of water into a saucepan and add the clove and star anise. Bring to a boil and reduce to half. Let the spiced vinegar cool and pour into a jar. Now add the Greek olive oil and some salt and pepper. Time to shake again. Taste and adjust if needed.
5. Pasta Salad Dressing with Olive Oil, Garlic and Chili Pepper
When it comes to pasta salad dressing with olive oil, the possibilities are endless. But with this version, we don’t think anything’s missing.
What do you need?
- 1 red chili pepper, finely chopped (optionally deseeded)
- 10 tablespoons of extra virgin olive oil
- 4 cloves of garlic
- Handful of chopped parsley
- Sea salt and freshly ground black pepper
Preparation:
Add the olive oil to a pan. Add the garlic and chili and gently fry until the garlic is lightly browned. Add the mixture to your pasta salad with the parsley and stir well. Your pasta salad dressing with olive oil, garlic and chili pepper is ready!
6. Dressing with Roasted Chili Pepper
We’ve saved the spiciest for last! This is a fantastic dressing for salads with crunchy vegetables like carrots or bell peppers.
What do you need?
- 3 fresh red chili peppers
- 10 tablespoons of extra virgin olive oil
- 3.5 tablespoons of fresh lemon juice
- Bunch of fresh mint (leaves finely chopped)
- Sea salt and freshly ground black pepper
Preparation:
We start by prepping the chili peppers. Use a sharp knife or fork to poke small holes in the peppers. Hold them with metal tongs over a gas flame until they’re charred all over. Don’t turn the flame too high! Alternatively, use the grill—safer and just as effective. Place the peppers in a bowl and cover with cling film. After 15 minutes, the skins should peel off easily. Remove the skin, cut open the peppers, and scrape out the seeds (they can go in the bin). Finely chop the flesh and mix with the mint in a bowl. Add the olive oil and lemon juice. Stir well and season with salt and pepper. Enjoy!
