A tasty dressing doesn’t have to take much effort. It can actually be very simple! And we prove that here with 5 easy recipes for dressings with olive oil as a base.

1. Lemon and Olive Oil Dressing

A lemon and olive oil dressing is an all-round dressing that you can use on practically any salad. But it’s especially delicious with fish due to the high citrus content in the dressing.

What do you need?

  • 3.5 tablespoons fresh lemon juice (about the juice of exactly one lemon)
  • 10 tablespoons extra virgin olive oil
  • Sea salt and freshly ground black pepper
  • Jar with lid

Preparation:
Combine the lemon juice and olive oil in a jar, and add salt and pepper to taste. Shake well and taste the lemon olive oil dressing with a piece of lettuce. Add more salt, pepper, and/or other herbs to taste. Your lemon olive oil dressing is ready!

2. Balsamic Vinegar and Olive Oil Dressing

This balsamic and olive oil dressing is especially suitable for Italian-style salads with a lot of green (leafy) lettuce and various types of antipasti for a large dinner.

What do you need?

  • 3.5 tablespoons balsamic vinegar
  • 10 tablespoons extra virgin olive oil
  • Sea salt and freshly ground black pepper
  • Jar with lid

Preparation:
The preparation is almost identical to the recipe above. Combine the balsamic vinegar and olive oil in a jar, and add salt and pepper to taste. Shake well and taste the dressing with a piece of lettuce. Add more salt, pepper, or other herbs to taste. Now you can enjoy your balsamic and olive oil dressing!

3. Sicilian Dressing

This dressing is especially pleasant with a salad featuring fish, such as grilled tuna or shellfish. But don’t limit yourself to just that, as it’s a versatile dressing!

What do you need?

  • 1.5 tablespoons fresh lemon juice
  • 1.5 tablespoons fresh orange juice (or blood orange juice)
  • 10 tablespoons extra virgin olive oil
  • A few pinches of dried oregano
  • Sea salt and freshly ground black pepper
  • Jar with lid

Preparation:
Put all the ingredients into the jar and shake well. Taste the dressing and add more oregano or salt and pepper if necessary. Enjoy your Sicilian dressing!

4. Salad Dressing with Olive Oil, Vinegar, Star Anise, and Cloves

Now we’re going on a slightly more exotic tour with this salad dressing! If you have a salad where you’d like to add cheese or a cold version of deli meats, try this dressing. It’s so unique that you can’t buy it pre-made in stores.

What do you need?

  • 8 tablespoons white wine vinegar
  • 2 cloves
  • 1 star anise
  • 10 tablespoons extra virgin olive oil
  • Sea salt and freshly ground black pepper
  • Jar with lid

Preparation:
This salad dressing with olive oil has a slightly more varied preparation than the options above. Pour the vinegar with a little water into a saucepan and add the cloves and star anise. Bring the mixture to a boil and let it reduce by half. Let the spiced vinegar cool, then pour it into a jar. Now add the Greek olive oil and some salt and pepper. Time to shake! Taste and adjust according to your preference.

5. Pasta Salad Dressing with Olive Oil, Garlic, and Chili Pepper

For a pasta salad dressing with olive oil, you can go in any direction. However, we’re happy with this pasta salad dressing!

What do you need?

  • 1 red chili pepper (optional, deseeded and finely chopped)
  • 10 tablespoons extra virgin olive oil
  • 4 cloves of garlic
  • Handful of parsley, finely chopped
  • Sea salt and freshly ground black pepper

Preparation:

Place the olive oil in a pan. Add the garlic and chili and cook gently until the garlic is lightly browned. Add the mixture to your pasta salad along with the parsley and stir well. Your pasta salad dressing with olive oil, garlic, and chili pepper is ready!

6. Dressing with Roasted Spanish Pepper

The hottest dressing we save for last! This is a delicious dressing that pairs well with salads featuring crunchy vegetables like carrots or bell peppers.

What do you need?

  • 3 fresh red Spanish peppers
  • 10 tablespoons extra virgin olive oil
  • 3.5 tablespoons fresh lemon juice
  • Bunch of fresh mint (leaves finely chopped)
  • Sea salt and freshly ground black pepper

Preparation:
Start by preparing the Spanish peppers. Prick small holes in the peppers with a sharp knife or fork. Hold them over a gas flame with metal tongs until they are blackened all around. Don’t turn the gas too high! You can also place the peppers under the grill for safety. Then, place the peppers in a bowl and cover them with plastic wrap. After 15 minutes, the skin should peel off easily. Peel the peppers, open them, and scrape out all the white seeds (discard them). Finely chop the flesh and place it in a bowl with the mint. Add the olive oil and lemon juice. Mix well and season with salt and pepper. Enjoy!
