Next, you look at the pressing of the olives. When you press the olives on the same day they are harvested using an authentic method, the olive oil that comes out is of the best quality. The longer you wait, the lower the quality of the oil.
Then you consider the production process of the pomace olive oil. This is, in our opinion, the most important factor. We obtain pomace olive oil by heating the pulp to 60 degrees Celsius and refining it naturally. However, much pomace olive oil is refined by adding hexane, a chemical substance that is not suitable for consumption. In our view, you absolutely do not want to find this in your pomace olive oil.
Finally, you look at the (extra virgin) olive oil that you add to the pomace olive oil to give it more flavour and nutrients. We add organic extra virgin olive oil, which is the best type of olive oil. Other brands add (extra virgin) olive oil, which is of lower quality. This means less flavour and fewer nutrients.
